This Pesto is packed with aubergines ripened under the Mediterranean sunshine, and its mellow smokiness combines with sweet roasted notes from the garlic. Inspired by the Italian dish, Pasta alla Norma, it is also delightful in roasted vegetable tarts, coated on chicken skewers and stirred through dips.
